Rogan Josh (Plant-based)
This is a mild curry and great for a meatless meal. If you like it hot you can easily add in a couple of chillies!
Fry the onion and the Rogan Josh paste for approximately 5 mins.
Add the ginger, chopped coriander, chickpeas and sweet potatoes to the pan and cook for 10 mins.
Add the tomatoes with 200mls of boiling and simmer for 25 minutes.
Add the coconut milk and spinach leaves. Stir for a few minutes to allow it to wilt. Serve with coriander leaves.
