Rogan Josh (Plant-based)

This is a mild curry and great for a meatless meal. If you like it hot you can easily add in a couple of chillies!

 Oil spray
 2 chopped red onions
 3 tbsp Rogan Josh paste (Carrefour or Spinneys)
 3 ½ cm grated ginger
 2 sweet potatoes (180gm each approx.) – chopped into small chunks
 1 can chickpeas undrained
 1 can chopped tomatoes
 1 small can coconut milk
 1 bag of 250gm fresh spinach leaves
 2 tbsp chopped coriander

Fry the onion and the Rogan Josh paste for approximately 5 mins.

Add the ginger, chopped coriander, chickpeas and sweet potatoes to the pan and cook for 10 mins.

Add the tomatoes with 200mls of boiling and simmer for 25 minutes.

Add the coconut milk and spinach leaves. Stir for a few minutes to allow it to wilt. Serve with coriander leaves.
