Roasted tomatoes with Herbs and Feta
This is a delicious recipe and a great one if you have a surplus of tomatoes.
Preheat oven to 160 C.
In a ceramic baking pan, add the tomatoes, garlic, olive oil, herbs, and pepper. Bake for 40 minutes.
Remove the tomatoes from the oven and sprinkle the feta. Bake for an additional 10 minutes until tomatoes are golden and bubbly.
Remove from oven, top with thinly sliced basil and serve immediately. Lovely as a side dish or an appetizer served with crusty wholemeal bread.
