Muffin in a Cup

This is tasty and very quick to make. It can be used as a 'breakfast on the go' or a delicious snack.

 1/4 cup oat flour
 1 tbsp honey
 1 egg
 1/2 tsp baking powder
 1/2 tsp mixed spice
 3 tbsp berries

Mix egg and honey together

Add baking powder, all-spice, and flour and mix well

Stir in berries

Cook in a microwave for 60 – 90 seconds

To Serve

Add Greek yoghurt and a few chia and flax seeds and maybe a drizzle of maple syrup.
