Ksenia’s Broccoli Soup
Ksenia has been telling me about the Broccoli soup she makes for a while now. I finally got around to making it this week. I must say it's delicious and goes well with the Seed Crackers that were featured last week. Thank you, Ksenia, for sharing your tasty recipe.
Chop the vegetables finely.
Add chopped onion and leek to a saucepan and sweat in a little oil or butter.
Add the potato and broccoli.
Add the vegetable stock cube to the hot water and mix it with the vegetables.
Add pepper and salt to taste.
Cook for about 20 minutes until the potato is cooked.
Blend together until smooth.
Optional - add a tablespoon of sour cream or coconut milk to make the soup a little creamier.
