Healthy Apple & Cinnamon muffins
These Healthy Apple Cinnamon Muffins are moist, fluffy, and tasty. They are made healthier with whole wheat flour, Greek yogurt, and contain no butter or refined sugar!
Preheat the oven to 180 C.
Peel and grate the apple.
In a small bowl, whisk together the flour, baking soda, cinnamon and salt. Set aside.
In a separate bowl, whisk together the eggs, maple syrup, Greek yogurt, milk, coconut oil, and vanilla until all combined. Add wet ingredients to the flour mixture and mix with a spatula until just combined, being careful not to over-mix.
Fold in the shredded apple and divide the mixture evenly between the muffin cups. I used a small-sized muffin cup tray and made 24, however, if you prefer a larger muffin, the mixture makes 12 good-sized muffins.
Bake the muffins for 18 to 22 minutes, or until a toothpick inserted comes out clean, then let the muffins cool in the pan for 5 minutes before transferring them to a wire rack.
Depending on how sweet you like your muffins, choose between 1/4 to 1/2 cups of either maple syrup, or honey.
