Christmas Mince Pies
This is a great recipe. Remember to make the mincemeat first. I always manage to make about 18 mince pies as I make the pies slightly smaller. I like to serve these slightly warmed. They are so very tasty!
Sift the flour and salt together and rub in the butter until the mixture resembles fine breadcrumbs. Add enough cold water to make a firm dough. Knead lightly and chill for 10 minutes.
Preheat oven to 200°C.
Lightly grease tartlet tin with butter.
Roll out the pastry and cut into 12 - 18, 7 cm rounds. Place them in the tartlet tins and fill each with 2 teaspoons of mincemeat. Roll out the trimmings and cut into stars, position on top. Brush top with beaten egg and milk.
Bake for 15-20 mins until golden.
Cool and dust with icing sugar before serving.
