Chocolate Zucchini Bread

This chocolate zucchini bread recipe is delicious and a must-try for chocolate lovers!

 1 1/4 cup whole wheat flour
 1/8 cup cocoa powder
 1/2 tablespoon baking powder
 1/2 teaspoon baking soda
 1 teaspoon cinnamon
 2 eggs
 3/4 cups almond milk (at room temperature)
 1/8 cup coconut oil (melted)
 1/3 cup maple syrup
 1 teaspoons vanilla extract
 1 cups shredded unpeeled zucchini
 1/2 cup semisweet chocolate chips (plus more for sprinkling)

Preheat the oven to 150C and line a loaf tin with baking paper.

In a medium bowl, whisk together the flour, the cocoa powder, baking powder, baking soda, salt, and cinnamon.

In a large bowl, whisk together the eggs, almond milk, coconut oil, maple syrup, and vanilla. Stir in the zucchini. Add the dry ingredients to the wet ingredients and stir until just combined. Don’t overmix. Fold in the chocolate chips.

Pour the batter into the prepared loaf tin. Sprinkle with a few chocolate chips and bake for 50 to 60 minutes, or until a toothpick inserted into the centre comes out clean and the tops spring back to the touch. Remove from the oven and allow to cool completely.
