Beetroot, Feta, Orange and Walnut Salad
A delicious salad that can be eaten on its own or with additional protein like fish or beef.
Boil or roast the beetroot. Once cold, skin and slice into bite-size pieces. (To save time, I often use pre-cooked beetroot).
Arrange spinach on a plate and top with onion rings, beetroot, orange slices, feta, and walnuts.
Mix all ingredients together and sprinkle over the top of the salad, orange slices, feta, and walnuts.
This can be served as a salad. or makes a delicious accompaniment with kebabs.
