INGREDIENTS
Salad
4 medium unpeeled beets, tops trimmed
200 gm bag of spinach
1/4 medium red onion sliced into rings
2 medium oranges, peeled with segments removed from between membranes
120 gm crumbled feta cheese
Freshly ground black pepper
DIRECTIONS
1. Boil or roast the beetroot. Once cold, skin and slice into bite-size pieces.
2. Arrange spinach on a plate and top with onion rings, beetroot, orange slices, feta, and walnuts.
INGREDIENTS
Dressing
1 1/2 tablespoons balsamic vinegar
1 teaspoon Dijon mustard
1 teaspoon grated orange zest
1 teaspoon honey
4 teaspoons olive oil
Pepper
DIRECTIONS
1. Mix dressing ingredients together and sprinkle over the top of the salad.
